And here's the recipe I followed

Bite Sized Molasses Spice Cookies

1/3 cup unsalted butter, softened
2/3 cup packed brown sugar
1 egg
1/4 cup dark molasses
2 cups whole wheat flour (alternately all-purpose would work)
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon cloves
pinch black pepper
1/2 teaspoon salt
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon

Preheat oven to 350 degree F and line a cookie sheet with parchment paper; set aside.

In a large mixing bowl beat the butter with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, beat until combined. Beat in egg and molasses. Stir in the flour, baking soda, salt and spices.

Shape dough into 1-inch balls. Combine the granulated sugar and 1/2 teaspoon cinnamon. Roll balls in sugar-cinnamon mixture. Place 2 inches apart on prepared cookie sheet and squash slightly with your fingers. Bake for 10 to 11 minutes or until set and tops are cracked.

Remove from cookie sheet. Cool on a wire rack. Makes about 4 dozen

My notes:
- I used King Aurthur Whole Wheat flour, measured using the "scoop and sweep" method
- I used cayenne pepper instead of black
- I made my cookies larger using a small disher (ice-cream scoop)
- They took about 14 minutes to bake
- This recipe made twenty-five cookies

Update: The cookies the next day were a bit on the dry/crisp side.

Giant Molasses Cookies:

4 1/4 cups all purpose flour
1 tablespoon ginger
1 1/2 teaspoons baking soda
1 1/2 teaspoone cinnamon
1 teaspoon salt
1/8 teaspoon cloves
1 1/2 cups sugar divided
1 cup vegetable oil
3/4 light molasses
2 large eggs

1. Heat oven to 350 degrees F. Grease ;arge cookie sheet. Combine flour, ginger, baking soda, cinnamon, salt, cloves in medium bowl. Set Aside.

2. Whisk together 1 1/4 cups sugar, oil, molasses, and egg in large bowl until smooth.
Stir in dry ingredients. Refrigerate dough for 15 minutes.

3. Place remaining 1/4 cup sugar, in small bowl. Using 2 1/4 ich ice cream scoop or level 1/4 cup measure. form cookie dough into balls; roll balls in sugar. Place sugar-coated balls 3 inches apart on prepared cookie sheet. Bake 15-18 minutes until Golden. Cool cookies on wire ricks. Repeat with remaining dough (can be made ahead). Freezes up to one month. Makes 18 cookies
